Stan Huddleston received his Bachelor’s of Science degree in Chemical Engineering from the University of Notre Dame in 1980. He amassed 40 years in the industrial chemicals industry most of which was spent helping manufacturers optimize their processes for refining lipids. But at mid-life when he discovered that his own body’s lipids had become less than optimal, he decided to take a more active role in managing his health. Knowing that diet and lifestyle directly impact health and wellness, Stan decided to change from the low-fat high carbohydrate “Standard American Diet” also know as “SAD” to a plant-based diet. This change seemed to improve Stan’s cholesterol and triglycerides, however his fasting glucose, or blood sugar, increased to a point where he was diagnosed as being pre-diabetic. Since his mother and maternal grandmother both suffered from Type II Diabetes, Stan knew he had to make another major change in diet and lifestyle. While researching various diets he stumbled on something called the “keto” diet which seemed to offer some promise for folks who lipid panel results were non-ideal. He began his keto journey In October, 2018. The results were very favorable and very fast, just like for so many other people who solved their metabolic maladies, including Type II Diabetes, by simply adopting this relatively high fat, low-carb diet. The results were so dramatic that Stan felt compelled to share his experience with others who might also benefit. So, in December 2021 he published “The Keto Lifestyle – For Beginners.”
