José Enrique Campillo es médico especializado en nutrición y alimentación. Doctorado por la Universidad de Granada, ha ejercido como catedrático de Folosofía en la Universidad de Extremadura. A lo largo de su carrera ha realizado diversos estudios de investigación relacionados con la diabetes, el ejercicio físico y la nutrición; su trabajo le valió el Premio Nacional de Investigación en 1989.
